The kitchen will be serving up pozole, a rich, traditional Mexican stew made from hominy (large, dried corn kernels) and meat, typically pork or chicken. Originating in pre-Columbian Mesoamerica, pozole is often served during special occasions and holidays, including Mexican Independence Day, Christmas, and birthday.
